I earned my level 1 crunchy hippie mom badge birthing my little man Mitt unmedicated (ya know, how everyone around the world does...) Fresh Basmati Rainbow Bowl

Colors and fresh ingredients are absolutely essential to a healthy diet, and this recipe hits all the qualifications! Turmeric turns the basmati a rich yellow, fresh cilantro and mint provide the green, red onions add a purple hue, and bright red pomegranate pips finish it off.

Here’s what you’ll need…

Rice Bowl Essentials:

  • 1 1/2 cup raw organic basmati rice, rinsed well

  • 2 1/4 cups water

  • 1 head organic cauliflower (2lb) stems cut off, and florets chopped into 3/4in pieces

  • 1 organic red onion roughly chopped

  • 4 organic minced garlic cloves

  • 1/2 cup fresh organic pomegranate pips

  • 1/4 cup organic extra virgin olive oil

  • 2 Tbsp fresh organic chopped cilantro

  • 2 Tbsp fresh organic chopped mint

  • 1/2 tsp turmeric

  • 1/2 tsp cumin

  • 1/2 tsp cinnamon

  • salt and pepper to taste

To build your bowl:

  1. Add 2 Tbsp oil, salt, pepper, and red onion into a saucepan. Sauté until soft and lightly browned.

  2. Add turmeric, half the cumin, cinnamon, garlic, and rice to the saucepan. Stir and cook altogether until rice begins to look translucent.

  3. Add water to rice and onion saucepan, let it start simmering, then cover and reduce to low heat. Leave it to cook for 17 minutes.

  4. While you wait for the rice, toss your cauliflower, remaining oil, and the other half of the cumin together. Spread on a sheet pan, and roast uncovered for between 10 and 15 minutes. Set aside as you begin to build your bowls.

  5. Split your rice between however many bowls you need, or make a portion for yourself. Top with desired amount of cauliflower, pomegranate pips, cilantro, and mint. Eat up!
